Dark chocolate cranberry pumpkin muffin recipeFew foods say fall like pumpkin. Whip up this recipe for dark chocolate cranberry pumpkin muffins for a sweet autumn treat.

Recipe ingredients:

2 cups flour
3/4 cup sugar 
3 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. salt
1 cup pumpkin
1/2 cup unsweetened applesauce
2 beaten eggs
1/2 cup dried cranberries
1/2 cup dark chocolate chips

Instructions:

1. Pre-heat oven to 400 degrees Fahrenheit.
2. Spray muffin pan with fat-free cooking spray or line with paper baking cups.
3. Combine flour, sugar, baking powder, cinnamon, ginger, and salt in large bowl.
4. Add pumpkin, applesauce, eggs, cranberries, and dark chocolate chips. Whisk just until moistened.
5. Fill muffin cups 3/4 full.
6. Bake for 17-20 minutes until knife inserted in center comes out clean.

Serving size: 1 muffin
Yield: 15 muffins
